No Comments We had the recipe off the Foster Farms Chicken family package you get from Costco…it was AWESOME!
Next time I think I will add some chopped shallots and diced Romas…
Creamy Tuscan Chicken
Ingredients:
4 skinless, boneless chicken breasts
2 T olive oil
salt and pepper to taste
1/2 C white wine
1 C sliced mushrooms
1 C heavy cream
4 cloves garlic, minced
1/4 C Parmesan cheese, grated
1 C (packed) fresh baby spinach leaves
1 C fresh basil (rough chopped)
Directions:
Salt and pepper chicken breasts, then saute in olive oil over medium high heat about 8 minutes per side; set aside.
Add white wine to hot pan; reduce it by half, then add mushrooms and saute 4 – 5 minutes. Add cream, garlic, and Parmesan; bring to a simmer. Add spinach and basil and cook on low until spinach is tender. Add chicken and simmer about 5 more minutes until done (chicken should be 165 degrees F internally).

No Comments Well, somehow Stillwater Ranch was tossed into the mix of nominees for “Best Dude Ranch” in the Northwest and we won! King 5 News/Evening Magazine came out and did a feature on us last Sunday and it was awesome. Dalton, Kelly (wrangler) and Barb guided the guest including the birthday girl and her entourage up the mountain while I guided the the camera man, producer and Dan as wrangler for team “Ani Oakley!”
Here’s a pic Dan took of me and my horse Rain along with the camera man’s horse “Frankie” as we waited for things to getting “bucking

No Comments After our ride with guest up the mountain, the Stillwater Ranch crew long with Tuki stopped by our neighbors place to browse through their tack sale and we found a memento for Tuki along the way.

No Comments Our friends and horse trainers Quinton and Danielle of Desfountain.com graciously offered to help me get Cimarron started under saddle. So yesterday Cimarron and I took the 2 mile walk to the barn where Quinton and Danielle train their beautiful Arabian horses. Below are some pics from yesterday.
Enjoy Bellas!

No Comments My friend and neighbor asked me to put together a portfolio of photos for her son Cory that is selling his horse Toby…the following are a few shots I’ve put together for him to show potential buyers. The photos show Cory with his horse in various events such as cutting, sorting and barrel racing. To see all the photos read the entire post by clicking after the jump.
If you are interested in Toby you can obtain details by contacting Cory here: cory8331@hotmail.com

No Comments I’ve been abscent alot since the winter has been really drab; this morning however we had a dust of snow laying all around the pasture so I decided to get the boys playing…they really didnt need much encouragement. I just love watching Cimarron’s movement as he holds his beautiful head up high and run free.
I was able to get a couple shots but the following two are my favorites.

Comments Off Here is a short video edit I did for my neighbor Judy, she asked me to transfer some old video footage from her mini DV cassettes and add them to DVD so she can playback on TV. I saw this scene and just had to make her a short clip to share on Facebook, with her permission of course. Footage taken from a 2003 neighborhood playday of timed events.
